In the run-up to the Kinesiology Department's 8th Annual Chili Cook-Off, we're talking with some of last year's winners to get a sense of what's in store for this year.
Dr. Espen Spangenburg, Assistant Professor and Director of the Molecular Systems Lab, won last year's title of "most interesting" with his avant garde, forward thinking, and all together groundbreaking "Chocolate Chipotle Chili." He'll be competing again this year, and is looking forward to tasting everyone's entries.
Healthy Turtle: Where did you get the idea for your chocolate chipotle chili from last year?
Dr. Espen Spangenburg: It was a dish I made for my wife. She is a big chocolate fan.
HT: What do you think the secret is to great chili?
Dr. Spangeburg: Time…good chili isn’t made in 30 minutes. You need to have the time to cook it slow to get the flavors from each ingredient to stand out.
HT: Do you have something special cooked up for this year's cook-off?
Dr. Spangenburg: I have one worked out....I am keeping it a secret for now.

The Department of Kinesiology's annual chili cook-off between the staff, faculty and graduate students will be held Friday, January 23. Awards for best-in-show, hottest, vegetarian, and most interesting chili along with best dessert and breads. Thanks to Dr. Spangenburg for sharing his time and chili knowledge.
